Most importantly, Greeks speak Greek but many of the Corfu locals under 40 do speak English. You will be amazed at just how easily they command the language. All school kids start learning the language at around third grade. Those in the tourism sectors can not only speak English fluently, but also have a grasp on other languages.
Corfu is considered safe for families and travelers. Violence and crime doesn't really make the daily or monthly news. Pick-pocketing is almost non-existent. This is referring to Greeks in general!
